Culinary classes are a great way to bring people together!

Hi, I’m Chef Tom. I’m a Rhode Island based research chef and culinary educator! I do programming for teens and adults on how to make meals, prepare for the week, and be safe in the kitchen!

I travel all over New England doing demos and work with libraries, schools, and businesses to make better food at home!

Everything travels with me, so all you have to supply is a table and an outlet!

  • Weekly Calendar

    Weekly Meal Prep Demo

    A 1-2 hour program on preparing a weekly menu only having to “cook” once. This program is about creating week’s work of lunches and dinner that can be knocked out quickly to save time and money throughout the week.

    The focus of this is to show that preparing the base items ahead of time can still lead to a flavorful week without getting boring.

    Demo with samples up to 20 people - $500
    Demo with samples up to 50 people - $750
    Demo without samples - $400

    All items will be prepared either on an induction burner, or in an air fryer, unless a convection oven is available at the location.

  • 1770s Colonial American Cooking

    A 45 minute to 2 hour session about the foods of Colonial America. This includes discussion about what foods were available, how they were prepared, and demonstrations of different dishes.
    If done outside it can be over open fire, but since fires aren’t good for indoor cooking, those classes will be done on an induction cooktop, which works just as well for Cast Iron cooking!

    Lecture and Demo - $200

    * (Class length will need to be at least 90 minutes
    to accommodate cooking times.)

  • Macaroni and Cheese

    Semi-Scratch Cooking

    A 45-90 minute program aimed at teens (though it can be adapted for adults) that educates on how to use some prepared items and some fresh items to make whole new dishes. This demo combines cooking with knife and kitchen safety.

    If you have a specific meal you’d like to have that incorporates into other programming your group or library is doing, I will work with you on the menu.

  • Induction Cooktop

    Introduction to Induction cooking

    The future of cooking is here!

    Induction cooktops are the next generation of electric stovetops. They are more energy efficient, faster, and safer than traditional coil burners and even Halogen cooktops.

    Many power companies are offering rebates for upgrading to the energy efficient induction cooktop, but there are a few drawbacks as well.

    This class will cover the basics of what the induction cooktop is, what pots and pans will and will not work with it, and demonstrate some of the safety features and unique properties of this technology.

    Demo with samples up to 20 people - $500

    All items will be prepared on a portable induction cooktop.

  • Grilled Salmon Salad with Soy Sauce

    Make a Meal Demo

    A 45-90 minute program on preparing a single full meal. This includes one main dish, and two sides.

    If you have a specific meal you’d like to have that incorporates into other programming your group or library is doing, I will work with you on the menu.

  • Chef's Knife Set

    Knife and Kitchen Safety

    A 45-60 minute program for Teens and Young Adults on safe handling of knives and how to make basic cuts in different vegetables, as well as general safety in the kitchen.

    This class has no cooking component, and has no samples. But the participants will use knives, so a waiver may be necessary for participants.

  • ServSafe Logo

    ServSafe Food Handler Certification

    The Nationally recognized ServSafe Food Handler Program is a complete solution that delivers consistent food safety training.
    At the end of the class you will take the ServSafe Food Handler Assessment to earn your food handler credential.

    Cost is $100 for the class plus $15 per person, which covers the cost of materials and certification. Minimum 4 enrollees per class.
